Fish Chunk Pasta Sauce – Oil-Free

Gallbladder Diet Friendly: No meat, no oil, no dairy, no eggs, no nuts. Rich in tomatoes, fish, garlic.

Recent dietary changes eliminating most fat from oil and meat have forced us to redefine our cooking. I wanted to see how the absence of the traditional browning of the garlic in olive oil would change the flavor of this sauce. Apparently that didn’t do much damage as the sauce turned out flavorful even without the fish which was added in the last few minutes.

The sauce is light and briny due to the capers and olives. The mushrooms add a nice touch to the texture and consistency, while the fish serves only as a bonus to munch on atop the dish.

Lunch at the Ws

There are meals you want to be invited to and there are entire days so legendary that you want to be a part of them. The Wisniewskis’ home is one of those havens where one actually questions where they are. The amount of pampering and pleasure one gets from this place is just unheard of where I’m from, and will remain one of the highlights of my recent trip to Manila.

The twist they create on local dishes seems to open the diner’s eyes and make them nod agreeably, saying, “Why didn’t I think of that?” The overload of fresh colors and aromas only complimented this kitchen that was built for entertaining.

This was the intention of our hosts, of course. Hotel and restaurant management team Anabel and Tom Wisniewski of Raintree Philippines, a family-owned business that manages four restaurants in Makati (Museum Cafe, Chelsea Market Cafe, Mr. Jones, and Momo), surely spoil their guests in line with their training. The food was superb, the service staff was attentive, and after the long meal they offered massages and a dip in their backyard pool and waterfall.

I still cannot believe that was in Manila.

Discovery Shores Boracay – Birthday Dinner

I saw it in the works. The celebrant’s husband got up from his beach bed shortly after breakfast and talked to the manager of Discovery Shores Boracay‘s Indigo Restaurant.

“What do we want?” he asked our group. We threw out some standards.

Fish!
Prawns!
Squid!
Pork belly!

The manager wrote down the requests on a piece of paper and nobody thought about it after that. In the afternoon, the staff began setting up what would be the most beautiful outdoor dinner I’ve had. You could feel all the love in it, and I have to say it was a magical evening for all.

Mas La Grillade, New York

We are lovers of the grill, and so we found this restaurant that specialized in smoke and flame. We came to celebrate a birthday, and toasted in the soft color of the skylight seated at the center table of the second floor. Some dishes worth mentioning below:

ChickP Brooklyn

Aside from the fact that I used to live on the same block as this new restaurant, this joint opened right around the time Kulushkat did a few blocks away, and I was curious to compare the two places. There is something comforting about the whole pita-falafel-hummus combination other than how yummy it is, it’s usually quick, inexpensive, and makes you feel like you’re making the healthier choice.

We ordered the Falafel Trio ($11) which includes their three falafel flavors (spicy, spinach, regular) and an abundance of sides. Now I like sides. A-side from this we also ordered their roasted beets (yum) and baba ganoush, which was very rich in grilled flavor and was light and creamy. Very good. Happy tummies for $16. (The one downside: cold pita? Wtf?!)
